Shakshuka is a simple egg dish that is wildly customizable, delicious, comforting and simple to make. The literal meaning of the dish is “A mixture” and it is a mixture of crispy onions, warm tangy tomatoes, delicious vegetables of choice straight from your pantry and the star of the dish, eggs with crispy edges and golden runny yolks. Supplemented with sizzling spices the flavors are sure to burst in your mouth, creating an experience that you won’t forget.

Tips and tricks 

Since the dish is very customizable, especially with the vegetable element use what you have on hand. This dish is not a traditional shakshuka-it is my mother’s recipe, so it is not wholly traditional. However, it is nourishing and comforting and is highly recommended by anyone who has eaten it.

Prep Time- 15-20 minutes 

Cook Time- 20-25 minutes 



½ A large red onion 

2 small Tomatoes or one medium-large one 

4 Eggs-can increase if necessary 

½ cup Cilantro 

Veggies of choice-recommended spinach, mushrooms, zucchini  

2 Cloves of garlic-adjust according to preference. 



  • Dice your onion and tomatoes. Thinly mince your garlic and cilantro. Chop any vegetable of choice using a preferred method. 
  • Heat a pan and add a tablespoon of olive oil. Once it begins to show fine bubbles add in your onion and garlic. Fry until golden brown. 
  • If you choose to use additional veggies, add them now. 
  • Add the preferred amount of salt (turmeric if you have it), pepper and any other seasoning of choice. Add your tomatoes and cover with a lid until cooked through. Stir intermittently. Add a dash of water or vegetable broth. 
  • Make a small well using a spoon to make space for the eggs. 
  • Break in your eggs and cover them for 5-8 minutes or until cooked to your preferred amount. 
  • Supplement with carb of choice and enjoy!
