Zucchini-Ricotta Flatbread Recipe

This flat bread recipe is quick, creamy and melt-in-your-mouth delicious. It has subtle flavors that work together to create a comforting symphony to appease your taste buds. The crunchy soft flatbread is perfectly paired with the fluffy ricotta cheese, baked zucchini and tangy cherry tomatoes to cut through the natural sweetness. Tips-You can add or reduce the amount of cheese tomatoes and other toppings to suit your taste. The dish is highly customizable and fun to experiment with.

Ingredients- 

Flatbread of choice-ready made from store. 

Cherry tomatoes 

Ricotta cheese 

Sour cream 

Lemon 

Salt, pepper, chili flakes 

Zucchini 

Oil of choice 

Toppings of choice  

 

 

 

Instructions 

1) Pre-heat oven to 425 degrees (F) and place your flatbread on your baking tray. Spread some oil underneath to prevent sticking. Bake until browned-about 10-15 minutes. 

2) Place a desired amount of ricotta cheese (about half a cup per flatbread recommended) and add salt, pepper, and a squeeze of lime and a tablespoon of sour cream in a bowl and combine. 

3) Cut up your cherry tomatoes and place them in a bowl. Add salt, pepper and a squeeze of lemon to taste. Cut up your zucchini and other preferred vegetables. 

4) While the flatbreads bake, heat up a pan, add some oil and cook vegetables until tender. Season with salt and pepper. 

5) Take the flatbreads out of the oven, Top with ricotta cheese mix, cherry tomatoes and cooked vegetables. Bake in the oven for about 10 minutes. Serve and enjoy!
